Disposable plates and trays do more work than most operators give them credit for. A plate that bends under a loaded main course, or a tray that leaks through the base, creates a problem at the point of service where there is no easy fix. For events, street food, catering companies, and fast casual restaurants, the right plate or tray is about structural performance first, presentation second, and cost third.

Key Factors to Consider

Material and Construction

The main materials in disposable plates and trays are:

  • Bagasse (sugarcane fibre): Rigid, heat-tolerant up to around 100°C, genuinely compostable, and increasingly popular as the premium eco option. Handles sauces and oil without immediate failure but will soften over time. Typical prices are £15 to £35 per 100 plates depending on size.
  • Kraft paper/cardboard: Lighter and cheaper than bagasse. Works well for dry and semi-dry food. Grease-resistant coatings extend performance. Compostable if uncoated; check the lining spec if coated.
  • PP (polypropylene): Rigid, reusable in some formats, heat-tolerant, and cheaper than bagasse at around £5 to £15 per 100. Not compostable. Better for events where collection and washing is possible.
  • Foam (EPS): Largely phased out under UK single-use plastics restrictions and reputationally problematic. Avoid for new purchasing.
  • Palm leaf: Premium, genuinely natural, adds visual interest. Each piece is slightly different. Higher price point (£20 to £50 per 50 pieces) suits farm-to-fork events or upscale street food.

Size and Format

Common sizes for UK food service:

  • Side plate equivalent: 6 to 7 inch (150 to 180mm) -- desserts, sides, snack portions
  • Main plate equivalent: 9 to 10 inch (230 to 250mm) -- main courses, burger and chips
  • Compartment trays: divided into two or three sections, useful for food courts, children's meals, or combo portions without separate containers
  • Rectangular trays: better for wraps, flatbreads, or food served lengthways

For events and street food where customers eat standing up or moving, a plate with a slight rim prevents spills better than a fully flat surface.

Load-Bearing Performance

A plate that deflects visibly when held from one side with a full meal will lose you customers. Test your most loaded dish -- typically something like a burger, chips, and sauce all together -- before committing to a new plate. Bagasse and thicker kraft board generally perform better than thin paper plates. For anything above around 350g of food, a thin paper plate is a liability.

Grease and Moisture Resistance

Fried food, sauces, and wet salads all challenge plate integrity from below. A plate that becomes translucent or soft within five minutes of service is not fit for purpose. Check whether the plate is coated or PE-lined. For compostable claims, PE-lined products do not compost easily -- look for PLA or plant-starch coatings if this matters.

Sustainability and Compliance

Under UK legislation, plastic plates and trays were restricted for single-use food service from October 2023. Bagasse, kraft paper, and compostable alternatives are the main compliant replacements. Confirm that any compostable plate meets EN 13432. Palm leaf and bagasse are the most straightforward to verify.

Per-unit cost varies significantly with material and size. Budget kraft paper plates start around £3 to £6 per 100 for a 9-inch format. Bagasse equivalent runs £15 to £30 per 100. Palm leaf is higher still. For a busy operation, that cost difference across thousands of covers per week is significant -- run the numbers per cover before selecting a premium material.

  • For outdoor events, wind is a real hazard for lightweight plates. A heavier bagasse or thicker kraft board plate holds its position on a table better than a thin paper alternative.
  • Compartment trays reduce the number of separate containers needed for a meal combo and speed up service. Test the portion size in each compartment against your actual recipes -- some tray designs have awkward proportions.
  • If you are using recyclable plates, brief your staff and put signage at the point of disposal. An unlabelled compostable plate in a general waste bin ends up in landfill regardless of the material.
  • Order a mixed case of two or three sizes rather than a single size if your menu varies. A side-plate size alongside a main-plate size covers most scenarios without over-engineering.
